COOK: Cauliflower cheese 

1 medium cauliflower (approx 1lb/450g)
2 oz/ 55g butter
2 oz/ 55g all purpose/plain flour
1 pint / 460 ml milk
Handful of Bazil and sage or any herb of your choice
Pinch salt and pepper
100g cheddar cheese

Preheat the oven to 200C/ 395F/ Gas 7
Steam your cauliflower whole in a pan for approx 10 mins till its soft.
Meanwhile make a white sauce by melting the butter in as saucepan
Add the flour until it makes a paste consistancy
Add the milk bit by bit stirring contantly to make a smooth sauce adding a little more milk/flour if neccessary
Chop the herbs and grate half the cheese and add to the sauce
Season to taste.
Then place the cauliflower in an oven dish and break into chunky florets
Pour the white sauce over until all the cauliflower is covered
Sprinkly the remaining cheese on top and bake until golden (approx 30 mins)

The fact that the slugs have found it all the way upto my 2nd floor flat - I think its payback for covering the garden in slug pellets...they had literally circled the bed while I was sleeping - if I suddenly disappear - check the garden

Bake:
Wimbledon might be over but you can still taste the beauty of strawberries and cream... 
Makes 12 approx
Cakes:
175g (6oz) unsalted butter, softened
175g (6oz) caster sugar
3 large free-range eggs, beaten
175g (6oz) self-raising flour, sifted
1tsp vanilla extract 
Icing:
400g (14oz) full-fat Philadelphia cheese
300g (10oz) icing sugar, sifted
250g (9oz) strawberries, blended to a purée

1 Preheat the oven to 180c/ gas 4 and line a 12-tin muffin tray with cupcake cases. Cream the butter and sugar together, then gradually beat in the eggs (if it looks like the mix is going to 'split' add a little bit of the flour)
2 Add the vanilla and fold in the flour
3 Divide the mixture between the cupcake cases and cook on the middle shelf of the oven for about 20 minutes, until they are risen and golden then transfer to a wire rack and allow to cool.  
4 For the icing beat the cream cheese, icing sugar and strawberry purée together to form a shiny icing.
5.Ice as soon as the cake is cool enough (or it'll melt!)...and scoff!
